Chenin Blanc
Honeyed depth and mineral tension in equal measure — quince, beeswax, wet stone. Shares the acidity of Riesling and the weight of Chardonnay but belongs to neither.
Outstanding with kinilaw — the citrus-acid marinade mirrors the grape’s natural acidity perfectly. In the Loire Valley they drink Chenin Blanc with rillettes and fresh chèvre — the acidity cuts through the fat the same way it cuts through the calamansi. Also exceptional with grilled tanigue, butter-poached prawns, or anything with a light cream sauce.
