Cabernet Sauvignon

“Really, truly, try to figure out what your palate is all about. If you’ve determined that you don’t like dirty old stinky wine – old-world flavors – you probably like new-world fruit bombs. Stick to California Cabernet & Zinfandel.” Gary Vaynerchuck

America produces some of the worlds best Cabernet Sauvignons, an idea proven back in 1976 during the ‘Judgement of Paris’ tastings which put Napa Valley Cabernet Sauvignon and Chardonnay against rivals from Bordeaux and Burgundy. This event was the turning point in American wine culture as the winners, much to the dismay of the French judges, were both from Napa Valley. With this acknowledgment from the wine community and the efforts of figures such as Robert Mondavi, California and American Cabernet Sauvignon took the world by storm.

Cabernet Sauvignon is a black grape variety that gives deeply colored wines that have lots of tannin and acidity, and strong aromas. Typical flavors include black fruits, such as black currant and black cherry, often accompanied by herbaceous notes, such as bell pepper and mint. Oak is often used to age the premium wines, softening the tannins, and adding oaky flavors such as smoke, vanilla, coffee, and cedar.
