Pinot Noir is a black grape varietal with thin skins. The resulting wines are usually light in colour with low to medium levels of tannin. It likes moderate or cool climates. When balance is found, the resulting wines will display red fruit (strawberry, raspberry, cherry), and will develop vegetable and animal nuances (wet leaves, mushroom, gamey-meat aromas) with age. In hotter regions, Pinot Noir loses its delicate flavours, and the wine becomes jammy. Some Pinot Noirs are able to develop great complexity with age. However, except for the very best wines from Burgundy and other premium Pinot growing regions, most Pinot Noir wines are best consumed when they are youthful and fruity. It is common to mature the best Pinot Noirs in oak, but the toast and vanilla notes of new oak can easily overpower the varietal’s delicate flavour.
